Guess what? My blog SnapHappy Foodie turns 7 today!
What’s been happening in this blog during the past year?
Since we were pretty much confined to the four corners of our homes during this pandemic (and reasonably so, if I may add), I shared tips like “10 Ways to Manage Your Quarantine Eats” and “WWF-Philippines’ Tips in the Fight Versus COVID-19”. I blogged about food finds like Mendokoro Ramenba’s Take Home Ramen Kits, Kenchang Dishes and Pieces by Celine, City Meals PH, Amanda’s Oven, and Lobster Rolls from Deep Sea Eats.
Since we’ve been under various forms of community quarantine, I had more than enough time to bake items like:
- Beer Bread
- Butterscotch Blondies
- Crock Pot Bread
- Ube Cheese Pandesal – because who didn’t make or buy these last year?
- Lemon Bread
My endless focaccia experiments (Rosemary Sage Thyme Focaccia, Garlic Thyme Rosemary, Rosemary Parsley Focaccia with Sea Salt, Garlic Oregano Focaccia with Sea Salt), Soft Dinner Rolls, Coconut Milk Pudding Rolls, Cheddar Cheese Crusty Bread, Mini Pavlovas topped with Coconut Whipped Cream and Strawberries, Strawberry Cake as well as my blue cupcakes and cake with blue vanilla buttercream frosting didn’t appear here, but I’m sharing the pictures below.
My major baking experiment was actually selling my baked goodies like Classic Banana Bread, Banana Walnut Bread, Chocolate Crinkles, Beer Bread and Crusty Bread to friends for the holidays. I wanted to test the waters whether or not starting my own baking business is something I’d like to do.
I also dabbled in fermentation – fermenting water kefir. To my surprise, it’s thriving.
When SnapHappy Foodie turned 6, I had such fun plans for this blog – discover more heirloom dishes and learn more about our Filipino food heritage, visit more local farms and support more farm-to-table endeavors. However, since we’ve all been basically holed up at home longer than expected, those plans never materialized. I’m usually excited to write and share my food discoveries, but there were far too many things going on that food discoveries fell to the wayside. Now that SnapHappyFoodie turns 7, well, we’ll see what this year has in store. Anyway. . .
