Every time we go on vacation, we always travel with our little Shih Tzu so we’re always looking for restaurants with outdoor seating, the pet-friendly sort of establishments that allow our little guy to sit under our table without anyone making a fuss.
In Jackson Hole, that was Café Genevieve. This was just perfect because I was all too curious after reading about them and their Pig Candy.
As a result, I ordered their Pig Candy Salad with “Butter Lettuce, Olive Oil Cured Tomatoes, Shaved Cucumbers, Shropshire Blue Cheese, Tomato Balsamic Vinaigrette” ($12). It was an attempt to be healthy while consuming Pig Candy.
Now what can I say about Pig Candy? Imagine sweet bacon. I didn’t think it would actually work, but they made it work. They made it work so well that I ended up buying a 4 oz. bag of Pig Candy to bring home. Oh, and did you know that I’m a once-in-a-blue-moon consumer of bacon? So yeah, me buying a bag means the darn thing is great. If you’re curious to try, you can buy it here. No, they didn’t pay me to promote it. It’s just good, so it’s worth sharing.
My husband ordered The Most Noble Burger ($15) – “4 oz. Double R Ranch Beef Patty, Crispy Pork Belly, Caramelized Onions, Fontina Cheese, Toasted Persephone Roll and House Cut Fries”.
Beef patty + crispy pork belly in one sandwich? Whew! No wonder it’s a burger most noble. The burger was a grilled combination of carnivorous delight. Had they thrown in some wild game, that would be a really crazy sandwich.
It’s too bad that we didn’t have time to go back for a second visit. By the way, the log cabin where Café Genevieve operates from is on the National Register of Historic Places. You can find their history here.
