Can you believe it? I’m on to my second attempt at baking and my third culinary attempt this year. : ) We still have leftover cranberries, and since I don’t like wasting anything, I looked for yet another recipe to try. This time, it’s cranberry nut bars. I got it from the Ocean Spray website.
Now, it turns out we didn’t have enough flour to follow this recipe to a T. With a half-cup flour, I halved all the ingredients. Instead of using two eggs, I only used one. I’m unstoppable, you know.
Anyway, here are the ingredients.
This is how the egg looks after I beat it and added the sugar.
Here it is with the flour and melted butter.
Lastly, I added the cranberries and walnuts.
Mixing it gently enough, I hope!
Before it goes in the oven…
Dilemma: how do I actually cut up bread and bars without crumbling them? I experienced that with the cranberry nut bread. After looking it up on the internet, I had to wait three hours to cut it…here you go!
After all these attempts, we still have 1/2 cup leftover cranberries. What else can I do with them?
