Vanilla’s gotten such a bad rap. Say what you will about vanilla – boring, simple, ordinary. But the thing is, vanilla is usually the base of all other flavors. Without it, where would other flavors be?
Me, I love vanilla.
That’s why my first cupcake experiment is Vanilla Cupcakes with Vanilla Buttercream Frosting. I tested Amy Sedaris’s Vanilla Cupcakes and Vanilla Buttercream Frosting recipes from Epicurious.
I’m such a newbie at baking that I don’t know how to fill each cupcake liner up to 2/3 full. Some cupcakes were big; others, teeny-tiny. I ended up baking two batches totaling 24 cupcakes. Felt so proud, then I realized that we can’t possibly eat all of them. There’s just the two of us!
What’s more, who knew making the frosting and then decorating the cupcakes was so much fun? I used a Wilton 1M decorating tip and it made the frosting look really pretty.
It was my first time to:
- bake cupcakes,
- make frosting from scratch,
- then put frosting on cupcakes.
I also started adding sprinkles, but decided to leave the rest of the cupcakes sprinkles-free.
I’m so happy that I stumbled upon this recipe. This is definitely going to be my go-to recipe for vanilla cupcakes.
