I’ve dedicated this week to highlighting good-for-you products that deserve attention. Earlier this week, I wrote about Emmy’s Organics (you can find it here) and Organic India (it’s here). Today, I’m sharing with you another food find: Mikey’s Muffins.

Mikey’s Muffins is ready-made, paleo-friendly, gluten-, soy-, dairy- and grain-free English muffins made of eggs, almond flour, purified water, coconut flour, baking soda and kosher salt.

With six ingredients only, the muffins don’t really have a long shelf life because there are no preservatives. It’s important to keep these muffins frozen if you want to keep it longer, which is fine by me. It’s one of the reasons why I bake our bread every week.

The muffins seemed pretty small to me, plus it didn’t have the nooks and crannies that I’ve come to expect from an English muffin. I didn’t split it with a fork, but sliced it with a knife. I also used our toaster to toast these muffins, not a toaster oven or a conventional oven. Since hubby and I are not on the Paleo diet, we slathered butter and jam, then ate these for breakfast.

Verdict: With 95 calories per muffin, Mikey’s Muffins are tasty and wholesome, quite an innovative take on a classic breakfast item. The muffins are a healthy option for those who are on the Paleo diet, monitoring their caloric intake and/or avoiding gluten, dairy, soy, or grain.
